Summer Treat

As today marks the official start of summer, I began thinking of the special things that makes summer so fun and enjoyable–spending time with family, going to the beach, sundresses, barbecues, wait barbecues…that reminds me of my favorite appetizer! A few years ago my cousin made this delicious dip and I just had to get the recipe. So today, because it was the first day of summer, I decided to make it and share it with you! It is very easy to make and it costs under $20 (and takes under 20 minutes); it’s good for your budget and for your tummy (cheesy line, I know, but it’s true).

These are the ingredients you’ll need:

onions, cilantro, scallions (spring onions), bell peppers, cucumbers, tomatoes, lettuce, sour cream, refried pinto beans, guacamole

Chop up all your veggies and layer them in this order:

  1. Refried Pinto Beans-Goya
  2. Sour cream
  3. Mild Guacamole
  4. Lettuce
  5. Onions
  6. Tomatoes
  7. Cucumbers (optional; I tested it out this time to see if it would make a difference)
  8. Spring onions
  9. Cilantro
  10. Bell peppers (red, green, yellow, pink (haha just kidding they don’t exist, it’d be pretty cool if they did)
